Blackberry panna cotta

I love the mix of textures in this desert, the smooth panna cotta the crisp lightness of the honey wafer and the tart graininess of the blackberries. The best thing is that it was soooo easy and quick. I put some of the fresh  blackberries (from our blackberry picking day) into small liqueur glasses then placed them in the freezer to just solidify a little ( so that the panna cotta mixture would sit a little more on top. make the panna cotta and while it cools make the honey wafers. The panna cotta recipe is a lite version and while it is not as rich and decadent  I did not feel so guilty having a small dessert.

Honey Wafers


50g unsalted Butter
1/3 cup caster sugar
1 tablespoon Honey
¼ cup plain flour
1 egg white


Preheat oven to 180°C. Line 2 baking trays with baking paper.

Place all ingredients into a food processor. Pulse until smooth and well combined.

Spread batter onto prepared trays to form 10cm rounds.

Bake for 8-10 minutes , until golden. Allow to cool on trays
